What to do with all the basil you grew this season? Make pesto! And why not? Pesto is great on pasta, pizza, sandwiches or as salad dressing. It is easy to make, and best of all, is delicious. Ingredients To Make Pesto (Makes 1 cup)
- 4 large garlic cloves
- 4 tablespoons on lightly toasted pine nuts
- 1 cup of basil (firmly packed)
- 4 tablespoons unsalted butter (softened)
- 3 tablespoons olive oil
- ½ cup grated Parmesan cheese
Directions For Making Pesto
- Puree garlic and pine nuts in a blender.
- Add basil, butter and olive oil.
- Process until mixture becomes a thick paste.
- Place mixture into a bowl.
- Fold in the Parmesan cheese.
- Enjoy! This recipe also works well with kale or spinach.
